Winemaking
The fruit was ‘whole cluster’ pressed directly to a tank for cold settling over a period two days. Full fermentation was in new (60%) and seasoned oak (40%) as well as some stainless steel barrels. All barrels were French. Multiple blend of yeasts add complexity. The wine was left to age in barrel for 8 months and
allowed to go through full mL fermentation.
