Winemaking
Generally speaking for most varietals the grapes were pressed then racked after two days of cold settling. The fermentation took place at very low temperature, which slowed the fermentation and preserved many of the aromas from the grapes and produced an elegant and complex profile. Some volume was fermented in neutral oak barrels Chardonnay) to add weight and structure to the palate. Blend was made after fermentation in 2024 wines to include 2023/24 wines. Resulting flavors more complex due to two different vintages.
